it reminds me that it's still winter for another two months, and to appreciate the chill. this week we even had a tornado warning (in southern california?) and it's been a never-ending downpour. a beautiful storm indeed.

banana bread.

seth was having a terribly crappy day, so i made him some banana bread... in an attempt to make it healthier, i substituted butter for "i can't believe it's not butter: for baking" and "splenda"; he liked it until i told him what was in it (he tends to do that). i like to make things i can take to my mother (who is diabetic), and things that won't make me feel guilty for snacking on, while being appetizing to my significant other. the good news? he already finished most of it. below is my diabetic friendly or calorie watcher recipe:



Banana Bread Recipe



INGREDIENTS

3 or 4 ripe bananas, smashed
1/3 cup melted "i can't believe it's not butter" for baking
1 cup splenda
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour

METHOD

No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.*

weather envy.

as of lately, i've been hearing nothing but jealousy from friends in all parts of the country... i live in san diego, and we have been so spoiled with spring weather; but, are you really that surprised? we're known for amazing weather year round. however, once you live here, sixty-degrees is "cold / freezing". just ask my x-midwestern boyfriend (grew up in wichita, ks.) - he thinks fifty is freezing, from someone who had to walk to school in ten and below. spring always seems to come early for so-cal inhabitants... and green grass and flowers always inspires me to stroll around our lovely city and soak up a sliver of sun.
