2 1/4 cups gluten-free flour blend (available at organic/health food stores)
1 teaspoon gluten free baking powder (available at organic/health food stores)
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon xanthum gum (available at organic/health food stores)
3/4 cup "i can't believe it's not butter: for baking" softened
3/4 cup firmly packed splenda"brown sugar"
1/2 cup white granulated splenda
2 large brown eggs
2 teaspoons gluten-free vanilla (available at organic/health food stores)
2 cups gluten-free chocolate chips (available at organic/health food stores)
heat oven to 375 degrees. combine flour blend, baking powder, baking soda, salt and xanthum gum in medium bowl. set aside. combine butter, brown splenda and white splenda in a large bowl. beat at medium speed, scraping bowl often, until creamy. add eggs and vanilla. continue beating, scraping bowl often, until well mixed. reduce speed to low. beat, gradually adding flour mixture, until well mixed. stir in chocolate chips. drop dough by rounded tablespoonfuls, 2 inches apart, onto ungreased cookie sheets. bake 6 minutes, then flip the pan to brown the cookies evenly, bake another 6 minutes; total baking time: 12 minutes. (DO NOT OVERBAKE.) let stand 1 to 2 minutes. remove from cookie sheets. enjoy!

i also recommend using a cookie (or small ice cream) scoop, and a silicon baking sheet, they turn out super pretty and picture perfect. :)
