herb & raclette popovers

for thanksgiving i was in charge of the entire meal. pretty big undertaking i suppose... the easiest project out of all and that received the most compliments were my herb & raclette cheese popovers. popovers are so easy, i think next time i could even trust my significant other to take them on. raclette is a great cheese with tons of flavor, it is usually used for melting - which in this case makes it the perfect candidate for the popovers. here is the recipe:

2 eggs
1 tablespoon of butter (melted and cooled, plus 1 teaspoon for pan)
1 cup all-purpose flour
1 cup milk
1/2 teaspoon salt
2 tablespoons italian herbs (or herbs of your choice)
1/2 cup of raclette (cut up in little cubes)

preheat oven to 450 degrees. grease 6 cup muffin pan with 1 teaspoon of butter. place all of the ingredients (except the raclette cheese) into a food processor or blender and process for 30 seconds. divide the batter evenly between the cups of the muffin pan, then evenly divide the raclette between the cups - placing the cheese cubes in the center of each cup. bake on the middle rack for approximately 35-40 minutes. remove the popvers to a cooling rack, serve warm.
